A school bus completely bubbling with energy, chirpiness, laughter, and excitement, teachers trying their best to control our mischief and naughtiness, and as usual students - us who would hardly pay any heed to their commands - the bus trip would be more joyful than visiting the actual place during the picnic.
We were headed for a picnic at waterfalls and a temple outside our village, enjoying ourselves all the way along. We would usually have a pit stop since as kids we would come with a bag full of motion sickness, loo visits, and much more. It would also be a quick refreshment stop.
As we spilled out of the bus, my friends and I quickly claimed a shady spot beneath a majestic mango tree to spread out our sheets and snack baskets. I remember each of us pulling out a small metal tiffin, the aroma of roasted nuts, baked bread, and fried chips already escaping from within.
One of my friends shared with me her snack which looked exactly like a ring. As I bit into the first one, those rings were crispy on the exterior, giving way to the soft, onion-studded interior. Soon after I came home, I started bugging my amma about the tasty onion kodubale I had. And she asked my grandma instantly and told me the whole story behind it along with the recipe. My grandmother also told Amma that she would make it different from the authentic recipe, free from Maida. Keeping in mind our health always.
In a mixing bowl, my amma combined Rice Flour, oil, Onion, Rava, Curd, Edible Common Salt, and Sesame seeds. She kneaded this into a smooth dough, rolled it into small circles, and deep-fried the circles in batches until they puffed up into golden-brown, crispy rings.
The mouthwatering aroma filled the kitchen as she carefully monitored each batch to ensure perfect texture inside and out. Those few magical minutes of frying yielded the most irresistible onion kodubale.
Thanks to my curiosity, my mom patiently showed me how to fry up a fresh batch, ensuring that each kodubale emerged perfectly crispy and golden on the outside while staying delightfully soft and onion-flecked on the inside.

Coming back from school meant something or the other for each of my friends. For some it was their pet cat or pet dog, it would be playing with their sibling be it younger or older, for some it would be a sad part as they would want to go to extra classes.
But for me, it was always my grandma, or maybe the delicacies she would have prepared for me to welcome back from school.
Living with my grandparents was the biggest blessing for me. I got abundant access to learn about moral values, stories about different cultures, and cuisines, their wins, struggles, and much more.
Most importantly, I was able to get my hands on their treats abundantly throughout the year. Running back from school, I always needed something to munch on before I set foot to play with my neighborhood friends. And one of my favorite evening snacks was Nippattu (Thattai). My paati would either prepare and store it as a fresh batch which would last for more than a month or she would prepare it as a tiny batch for us to savor just for an evening, super fresh, super hot, and delicious.
Nippattu or thattai is a classic Karnataka snack made from a seasoned rice batter that is carefully dropped into hot oil and fried into thin, crispy, lacy-edged discs. The batter is made with par-boiled rice, lentils, cumin, chili powder, and asafoetida - creating an irresistible blend of nutty, spicy, and slightly tangy flavors.
When fried to perfection, the Nippattu emerges golden brown with a delightfully crunchy texture that shatters into delicious pieces with each bite.
Those evenings awaiting the freshly fried Nippattu are some of my most treasured memories. I can vividly picture myself rushing through the front door, dropping my schoolbag, and making a beeline for the kitchen. There, I would find my paati tending to the hot oil, skillfully dropping the fragrant rice batter to fry into crispy discs of pure delight.
The sizzle of the oil and the aroma of roasted spices would fill the air, tantalizing my senses and making my mouth water in anticipation. Paati would chuckle at my eager expression, carefully removing each golden-brown Nippattu from the oil with her slotted spoon, letting the excess oil drip off before transferring them to a plate.
As soon as they were cool enough to handle, she would hand me one, the crispy cracker still radiating warmth. I remember biting into it, savoring the delightful crunch and the burst of fragrant spices dancing across my tongue. ]]>I have never been a fan of commercial products in the name of health drinks that are nothing but loaded with sugar. That's why, instead of relying on those unhealthy options, we had our traditional method of preparing a nutritious and wholesome drink called Sathu maavu.
We would prepare this sathu maavu kanji for 2 whole days together as a cousin gang during our holiday time. We will together as a team will sundry the ingredients for sathu maavu with millets like Varagu/Kodo millet, Samai/Little millet, Thinai/Foxtail millet, Kambu/Pearl millet, Kuthiraivali/Barnyard millet, Ragi/Finger Millet, Red rice, Samba wheat, Makka cholam/Maize, White cholam/Sorghum, Barley, remove the dirts, dry roast them and then will grind them. The preparation, despite being a tedious one, would be great fun when we did it together.
Our grandma, more than our respective mothers, was always conscious about our health and would never let any fancy labels under the name of "health" invade our house. Because no matter what, she would carefully pick ingredients with a hawk eye and always be very careful about what goes into our body during childhood.
She was an ardent believer that during childhood, one should take care of their health as much as possible, as it sets the foundation for our entire life. Those days, during our summer vacations, we would eagerly await the arrival of our cousins from different parts of the state. As soon as they arrived, our grandma would gather us all and assign us tasks for preparing the Kanji maavu.
Back in the screen-time-free era, it was extremely fun and great when each of us would be busy and immersed in the task.
We would start by carefully sorting through the array of millets, removing any impurities or debris. Then, the real fun began – dry roasting each variety to perfection, filling the air with a tantalizing aroma that would make our mouths water in anticipation.
As the sun beat down on us, we would take turns grinding the roasted millet, the rhythmic sound of the stone grinders echoing through the courtyard under the moonlight. It was a labor of love, but we never felt tired because we were doing it together, laughing and chatting as we worked.
Grandma would oversee the entire process, her watchful eye ensuring every step was done with utmost care and precision. She believed that good health started with quality ingredients, and she was unwavering in her commitment to this belief.
Once the grinding was done, we would carefully sift the flour, and separate and sieve the fine powder from the coarse particles. A significant portion of Indian snacks and processed foods contain Maida / Indian All Purpose flour. It is a common ingredient in items like naan, roti, samosas, bread, biscuits, cakes, pastries, and many other baked goods.
Maida also known as refined wheat flour or all-purpose flour is a highly used ingredient in baking and in the production of snacks, and other processed foods. It is made by finely milling the wheat which eventually removes the bran and germ of the wheat. Maida became popular in India during the period of World War II, due to the food shortage. The wastes of wheat and flour from cassava tubes were used for the production of Maida.
Throughout World War II maida became a saviour hence it was easily available to any other food that was available during that time.
Maida is obtained from wheat grains after the bran and germ are separated. The wheat endosperm (the part of wheat that remains after the bran and germ are separated) is ground into a fine powder and is bleached.
To make it more white, Maida is bleached with chemicals such as Benzoyl Peroxide. Benzoyl peroxide is a popular hair dye and is commonly used in skin treatments as acne cream. And to make the Maida flour more soft, a chemical called “Alloxan” is used. This chemical is known to induce diabetes mellitus and is toxic to the kidney and liver.
Though refined wheat flour is derived from whole wheat, it does not contain the benefits that whole wheat contains.
During processing, the fiber content of wheat, the vitamins present in wheat such as Vitamin B1, B5, B12, Folate, and Riboflavin, these natural vitamins get destroyed. And since the fiber also gets destroyed, refined flour makes it hard for the digestive system to digest eventually causing constipation.
Whole wheat flour aids in weight loss as they have unsaturated fatty acids, and they are also rich in amino acids.

]]>The objective of the National Mission on Edible Oil - Oil Palm is to raise the domestic production of palm oil to 11.20 lakh tonnes by 2025-26 and to 28 lakh tonnes by 2029-30.
The government’s oil palm mission was launched despite the objections raised by India’s top forestry research institute against introducing oil palm in biodiversity-rich areas.
This is a major threat to the environment. Also, the reason why palm oil is bad is that each grown-up palm tree above 3 years old requires a minimum of 150 to 200 liters of water per day. And in older plants especially during the summer, the quantity of water requirement can increase up to 300 liters.
The palm oil trees have been changing the freshwater ecosystem for decades and have been lowering the water table. This alteration in the freshwater ecosystem can add salinity to the freshwater near the coastal areas, and lead to increased concentrations of arsenic in drinking water.
Palm oil cultivation has been emphasized on a larger scale by the government of India because the import value was 8.4 million metric tonnes (MMT) of palm oil in 2020-21, constituting around 18 % of global imports.
Palm oil is one of the cheapest oils available due to high productivity per hectare and it accounts for 70% of the total vegetable oil import. Since India is highly dependent on the importation of palm oil and as the demand for vegetable oil in India is increasing, the government has planned to expand the cultivation of palm oil to 3,28,000 hectares from around 40,000 hectares.
This cannot be achieved by relying just on rainfall, irrigation is highly essential to support the crops and, notably, the oil palm has a long gestation period of 4-5 years.
According to the World Wildlife Organization, palm oil production also can lead to an increase in the number of endangered species and impact national parks on a larger level. Each palm oil mill generates around 2.5 metric tons of liquid waste for each metric ton of palm oil produced. The release of this liquid waste into the freshwater can lead to water pollution affecting both humans and animals.
It is also notable that to lay the foundations for palm oil cultivation, forest fires are used to clear the vegetation. And this eventually increases the deforestation rate and paves the way for climate change.
Indonesia being the world's largest exporter of palm oil is also the third-largest global emitter of greenhouse gasses.
India is currently competing to become one of the largest global emitters of greenhouse gases by increasing the cultivation of palm oil.

Despite palm oil's effects on health, it has also raised major environmental concerns. Large areas of rainforest have been cleared for palm oil plantations, destroying the habitats of endangered species like orangutans, tigers, and rhinos. Choosing palm oil-free products helps protect biodiversity and ecosystems.
The benefits that palm oil carries can cloud consumers from the actual disadvantages of palm oil.
Here’s the truth we have uncovered for you. Red palm oil is a less processed version that contains 70-90% of beta carotene content, which eventually our body can convert into Vitamin A.

Thanks to my friends who have generously shared the vibrant cuisine of their homeland with me over the years. The stories, traditions, and unforgettable flavors they've introduced me to hold an extraordinary place in my heart and my tastebuds.
One particularly memorable experience was the first time my dear friend Lakshmi brought me homemade rice kodubale from her home. I eagerly took a bite of the crispy, palm-sized snack and was instantly transported - the soft, mild rice interior perfectly balanced by the spice that tingled on my tongue.
As Lakshmi told me how kodubale is cleverly crafted from rice, maida, and local spices, I deeply appreciated the ingenuity behind this iconic Karnataka food.
Over the years, my travels across Karnataka with Lakshmi and other friends have allowed me to savor this humble yet glorious snack all over its home state. Even after decades, I enjoy it as a quick bite on a train ride to Mangalore, an instant snack after visiting the stunning temples across the state, and as the perfect pairing with filter coffee at different cafes in Mysore.

The thought immediately reminds me of carefree childhood days spent at my grandparents' home.
As a chirpy, extrovert kid back then, it would hardly take a couple of days for me to roam around the village and make a bunch of friends.
Since the temperature outside would be unbearable and too hard to play outside, I remember clearly how we would all gather around my paati’s kitchen.
The whirring of the fan was like a soft melody in the buzzing heat to us, and the aroma of her freshly prepared snacks was all that we needed to beat the heat!
One snack that felt divine, delicious, was her congress kadlekai. Who said only juices, and smoothies are for summer? Her signature congress kadlekai was a trendsetter back then!
The Congress Kadlekai was a perfect companion during our summer holidays while we were busy reading comics and swapping stories.
I'd rush over to watch my paati dry roast the peanuts and catch the amazing aroma that escaped when she’d dry roast. I was always amazed at how she aced in preparing the snack to perfection every time!
I heard from her one summer that it was passed down to her from multiple generations ahead and learned later that the key was using the freshest ingredients - Fresh peanuts, pepper, curry leaves, and spices.
When I first tried recreating Congress Kadlekai in my kitchen, I knew I had to honor those traditional methods. It took a few attempts, but finally, my children gave their seal of approval!

Lord Ganesha is recognized for his elephant head, which is a familiar image for many. The path taken by an elephant is typically unquestioned and uninterrupted. If any obstruction is encountered, it's common knowledge that the elephant shatters it, clearing its way. This characteristic of overpowering hurdles is one of the many reasons Lord Ganesha is called upon first in religious ceremonies, ensuring a smooth operation without any impediments.
Now let us understand the rationale behind the immersion of the clay idols of Ganesha
Our forefathers were remarkably insightful.
In the Tamil month Aadi (mid-July to mid-August), the water level in the river rises, washing away shore sands. This circumstance causes the river to reach the ocean without first settling on the ground, resulting in a lack of fertility and dryness in the land.
In light of this, our ancestors developed an effective strategy. They utilized clay due to its water-absorbing properties, enabling it to immerse into the ground. This strategic practice enabled as much river water as possible to settle before reaching the sea.
Furthermore, they recognized the need to immerse the clay idol only after two to three days. This is because the clay, if wet, would simply wash away. Therefore, it required a certain period of drying. Once sufficiently dry, the clay could settle at the river bed and absorb a significant quantity of river water, thereby enhancing the fertility of the land.
A look back into the Modak served as offering
Modak is a beloved treat, and it's deeply interwoven with the persona of Ganesha. But what is the genesis of the modak, and where does it originate?
Modak has a long history that connects strongly with the agricultural landscape, especially the Maratha region's crop. The preparation of the steamed modak uses rice flour, specifically an accessible local rice variant called the ambemohur. The filling comprises common ingredients like jaggery and coconut, emphasizing a utilization principle where whatever is readily available is used.
Additionally, modak offers nutritional benefits and is seen as a food apt for monsoon.
The Marathi adaptations of the sweet dumpling, also known as modak, significantly influenced the variants in southern India. Particularly, the Thanjavur Marathas, an offshoot of the Bhonsle dynasty, had a profound impact not only in the political sphere but also in the culinary realm. Over time, they fine-tuned Marathi cuisine according to Tamil food culture preferences.
