There is no specific way on how to make tamarind rice. Every household has its own version of it, altering it with love.
This easy tamarind rice recipe was the "go-to" food when travelling—packed tightly in a banana leaf, resistant to spoiling, eaten cold with fingers. It made a quick tiffin meal that the kids ate without a fuss. For many, it reminded them of temple festival backgrounds where they were served in leaf bowls, the delicious sourness mixed with the scent of incense and camphor.
What Is Puliyogare or Tamarind Rice?
Puliyogare is a South Indian tamarind rice: a simple dish, bold in flavour. In essence, puliyogare is rice mixed with a spiced tamarind paste known as Pulikachal paste that has been slow-cooked with a little jaggery, red chillies, mustard seeds, curry leaves, and a special blend of roasted spices. These ingredients create a deep, earthy tartness with just the right amount of heat and sweetness.
Served as temple prasad or packed for long trips, puliyogare is a culinary delight with taste and longevity. Its natural preservative, tamarind, allows this delicacy to stay fresh in the fridge for days. It is topped with fried peanuts or sesame seeds for a crunchy finish, offering a unique flavour profile. Puliyogare touches the sour, spicy, savoury and satisfying spots in one's mouth. More than a meal, puliyogare is a comfort food.
